Raw main dishes represent the pinnacle of what can be achieved using simple raw vegetables.
Sandwiches, wraps, fingerfood, work lunches and snacks - these raw creations are bursting with flavour and nutrition, but are so light that you can eat until you're satisfied without a heavy and sluggish lethargy afterwards.
One of my favourite things to do is ditch the bread and create wraps out of big green leaves - cabbage, broccoli leaves + mustard leaves are all big enough to make a decent-sized wrap. Super fun!
